Melissa’s Cozy Ramen Recipe
Ingredients:
- 600g Chicken wings
- 500g Pork shoulder ( or your prefered cut)
- 1 whole head of garlic ( skin on, cut in half)
- Spring onion
- Fresh ginger (with skin)
- 2-3 carrots, roughly chopped
- 12 dried shiitake mushrooms
- Water (enough to cover ingredients)
- 3-4 tablespoons dark soy sauce
- 1 Tbsp Honey
- Light Soya Sauce
- Chilli oil
- Mirin
- Udon or egg noodles
- Bok choy
- Bean sprouts
- Sesame seeds
- Sesame oil
- Seaweed
For the Marinated Pork: done the night before
- Pork (your preferred cut)
- 1 Tbsp Honey
- Soy sauce
- Spices (your choice)
- Chili oil
For the Soy-Mirin Sauce: Can be made in advance and refrigerated
- 3-4 tablespoons soy sauce
- 2 tablespoons mirin
Instructions:
- Prepare the Broth: In a large pot, add the chicken wings, garlic, ginger, spring onion and carrots. Cover with water and add the 12 dried shiitake mushrooms and dark soy sauce. Simmer for 2-3 hours, then strain to get a clear broth.
- Marinate the Pork: Marinate the pork with soy sauce, spices, and chili oil for at least 24 hours. When ready, fry it in a pan until cooked.
- Prepare the Soy-Mirin Sauce: Mix soy sauce, mirin, and a dash of chili oil if desired.
- Assemble the Ramen:
- Cook the udon or egg noodles according to package instructions.
- Place the cooked noodles in a bowl, pour the hot broth over them, and top with fried pork, bok choy (blanched in hot water), bean sprouts and cut up pieces of seaweed (optional)
- Add some sesame seeds and drizzle with the soy-mirin sauce you can and add chili oil if you like some extra heat.
