This week was one of those weeks. The kind where everything feels like an uphill battle. Our kids caught a nasty cold, complete with high fevers, and just as they started to recover, we found ourselves catching it too. Exhausted and drained, we could have easily let our Friday date night go, but we decided to see it through. Sometimes, a little effort to reconnect is all it takes to lift the spirits.

A Much-Needed Reset

After days of wiping noses, managing medicine schedules, and comforting feverish little ones, we finally got them settled in bed. That sigh of relief when the house goes quiet? Priceless. But rather than collapse on the couch in defeat, we made the conscious decision to take some time for ourselves.     • 1/2 cup mayonnaise
    • 2 tbsp ketchup
    • 2 tbsp finely chopped gherkins
    • 1 tsp mustard
    • A splash of pickle juice (optional, for extra tang)
      Mix everything together and refrigerate until ready to use.
  • Flavored Mince for Tacos:
    • 500g ground beef
    • 1 packet taco seasoning (or homemade: 1 tsp paprika, 1 tsp cumin, 1 tsp onion powder, a pinch of cayenne, salt, and pepper)
    • 1/4 cup water
      Brown the ground beef in a pan, add the seasoning, and mix well. Add a splash of water to keep it moist and flavorful.

Cooking Up the Comfort

When it came time to cook, we heated up the pan and got right to it. First, we laid the tacos flat and spread the seasoned mince onto each one. The mixture had just the right amount of spice to wake up our tired taste buds. Then came the satisfying sizzle as we flipped the tacos, mince side down, onto the hot pan.
